Scotcheroos (Kathy Coleman)

  • 1 cup granulated sugar
  • 1 cup light corn syrup (like Karo)
  • 1 cup creamy peanut butter
  • 5 to 6 cups Rice Krispies
  • 1 cup chocolate chips or butterscotch chips

Instructions
1. Heat the syrup: Combine the sugar and corn syrup in a large saucepan over medium heat. Stir frequently until the mixture just begins to bubble around the edges. Do not let it roll-boil for long, or the bars will turn hard like rock.
2. Add peanut butter: Remove the pan from the heat immediately. Stir in the peanut butter until the mixture is completely smooth.
3. Coat the cereal: Pour the warm peanut butter mixture over the Rice Krispies in a large mixing bowl. Stir gently until every piece of cereal is well coated.
4. Press into pan: Press the mixture evenly into a greased 9×13-inch baking dish using a greased spatula or buttered hands.
5. Add optional topping: If adding chocolate, sprinkle the chips over the warm bars, let them sit for a couple of minutes to melt, then spread the chocolate into an even layer.
6. Cool and serve: Let the treats cool completely at room temperature before cutting them into squares
