Pasta – Grandma’s Meatballs & Sauce

Meatballs

  • 4 pounds lean ground chuck 90% (I buy a 3 pack from Costco-last time it was grass fed 85% lean)
  • 3 large eggs
  • 2 cups plain bread crumbs
  • 2 cups seasoned breadcrumbs
  • 3 tsp salt (you could use a teaspoon per pound)
  • 1 tsp pepper
  • 1 cup pecorino romano grated fine
  • 6 cloves garlic (mince in food processor with 1/2 cup water). This needs to be very fine.
  • 1/2 cup or more of water (want them to be soft on the inside-have to test them)
  • 4 tsp parsley
