
Meatballs
- 4 pounds lean ground chuck 90% (I buy a 3 pack from Costco-last time it was grass fed 85% lean)
- 3 large eggs
- 2 cups plain bread crumbs
- 2 cups seasoned breadcrumbs
- 3 tsp salt (you could use a teaspoon per pound)
- 1 tsp pepper
- 1 cup pecorino romano grated fine
- 6 cloves garlic (mince in food processor with 1/2 cup water). This needs to be very fine.
- 1/2 cup or more of water (want them to be soft on the inside-have to test them)
- 4 tsp parsley
